Dave usually covers major scale study on the opening night of a new 8 week session. He goes over the musical alphabet, the major scale, how chords are formed, key, timing, and applying the circle of 5ths. When you sign up again, sit in on the theory instead of playing.
He doesn't really go over modulation on that night, because modulation is an intermediate skill, and usually that 45 minute block goes by fast with the fundamentals. To modulate a tune, you really have to be versed in scales and chords in the various keys, his lecture on the major scale and chord formation will get you halfway there.
